The second day of the Hostex Cape show has been busy as cooking competitions take place and exhibitors showcase the latest products and services to new visitors.

A central point of interest to hoteliers, restaurateurs and chefs at all levels of experience is the South African Chefs Association's (SACA) Chefs Experience, sponsored this year by Nestle Professional and equipped by Vulcan.

Today saw the first leg of the Spekko Rice competition as well as a series of demonstrations and interactive and fun culinary educational experiences for the the audience.

President of SACA Stephen Billingham says the association has supported Hostex every year as it is an ideal forum to showcase the association and its members.

"It's the chef as a brand as well as an association. It gives us credibility and marketability, resulting in employability for chefs at all stages of their career," he says.

"It is a national get-together, where busy career chefs can catch up, share ideas and refresh friendships in the industry."

"Our role as an association is to assist where possible in the updating and enforcing of new trends, new equipment and the latest products worldwide on the marketplace."

"We've had the support from Nestle Professional and continuous support from Vulcan Catering Equipment, which has been involved since day one."

Billingham says of South Africa's chefs' achievements: "On conclusion of recent travels it is somewhat pleasing to return home and see honest, uncomplicated world-class and modern cuisine. We in South Africa don't realise the skills that we have and the quality of the raw products we have access to."

"As previously stated, South African cuisine is a world leader and respected globally. Further to that - and a relief to the consumer - we have a high standard of hygiene and sanitation in the preparation, cooking and serving of food."

On 2010 Fifa World Cup preparedness he notes: "I am confident we will satisfy and impress the requirements of an international palate. My concern is in the pricing - don't overprice. Keep your prices reasonable and sensible."

Billingham thanked all of the members involved in making Hostex Cape a success, including tremendous support from head office and the Johannesburg delegation.
